Lactose-Free - CHICKEN & PEAR SAUTE.
INGREDIENTS:
2 garlic cloves.
1 large onion.
2 tablespoons olive oil.
2 firm ripe pears.
4 skinless, boneless chicken breasts.
1 teaspoon chopped fresh rosemary or thyme,
One half teaspoon each of salt and pepper.
One half cup of dry white wine.
One-quarter cup of water.
2 tablespoons of Dijon mustard.
METHOD:
1. Mince Garlic and coarsely chop onion. In a large frying pan,
sauté the onion and garlic half of the olive oil, stirring often
until the onion softens. (About 4 minutes) Core the pears, and
slice into smaller pieces. Discard the cores. Cook the pear
chunks with the onion and garlic until golden. (About 2 minutes)
Remove mixture to a plate when done, and cover with foil.
2. Add remaining olive oil and chicken the to pan and cook until
golden-tinged - two to three minutes per side. Return the onion,
garlic and pear mixture to pan while continuing to cook the
chicken. Stir often to prevent too many brown bits forming.
Sprinkle with salt, pepper and rosemary or thyme. Mix the water,
wine and Dijon thoroughly and add to the pan. Cover the pan,
reduce heat to simmer, turning chicken occasionally until it's
springy when pressed. (about 12 minutes)
Fantastic with rice or orzo. Sprinkle sauce over chicken and
rice when serving.
SERVES:
4 servings.

Lactose-Free - CURRIED ROAST POTATOES
INGREDIENTS:
2 tsp cumin seeds
2 tsp cilantro seeds
6 tbsp canola oil
1 tsp ground turmeric
1 tsp black mustard seeds
2 garlic cloves, crushed
2 dried red chilies
1 lb baby new potatoes
DIRECTIONS:
1. Grind the cumin and cilantro seeds together in a mortar and
pestle or with a spice grinder.
Grinding them fresh like this captures all of the flavor before
it has a chance to dry out.
2. Put the oil in a roasting pan and add the turmeric, mustard
seeds, garlic and chilies and the ground cumin and cilantro seeds.
Stir well to combine evenly. Place in a preheated oven at 400
Degrees F for 5 minutes.
3 Remove the pan from the oven - the spices should be very fragrant
at this stage and add the potatoes. Stir well so that the oil
and spice mix coats the potatoes completely.
4. Return to the oven and bake for 20 - 25 minutes, stirring occasionally
to ensure that the potatoes are coated evenly.
SERVES:
4 servings.

Lactose -Free - ROASTED TROUT WITH THYMEINGREDIENTS:
4 trout fillets
4 tablespoons of fresh thyme
salt and freshly ground pepper
3 tablespoons of olive oil
2 lemons
2 cloves of garlic
4 bay leaves,fresh if possible
DIRECTIONS:
1. Preheat the oven to 450 Degrees Fahrenheit
2. Rinse the trout fillets and pat dry with paper towels. Put the fillets
into a roasting pan.
3. Take the thyme leaves off the stalks, and chop finely -
in a mini food chopper is a good way or smash up the leaves
using a mortar and pestle.
4. Chop the 2 cloves of garlic finely.
5. Mix the garlic with the thyme, olive oil, 1 teaspoon of salt
and some pepper.
6. Rub this mixture on the top of the trout filets.
7. Cut the lemons in half and remove the ends so they have a flat edge.
With the point of a knife make an incision into each lemon half and stick
a bay leaf into it. Put the lemons in the roasting pan with the trout.
8. Roast for 15 - 20 minutes.
This is terrific with oven roasted potatoes which you can make
at the same time as the fish in a different pan (just start roasting
the potatoes about 10 minutes earlier than the fish) and a green salad.

Lactose-Free - FRENCH TOAST
INGREDIENTS:
1 egg.
1 to 1˝ cups of vanilla soy milk.
Cinnamon (a little or a lot)
Bread (no milk ingredients)
DIRECTIONS:
1) Beat egg with a fork, then add vanilla soy milk. Mix well and
add cinnamon.
2) Dip bread into the mixture and cook in a non-stick skillet
until brown on each side.
3) Sprinkle with powdered sugar, honey, syrup, or jam.

Lactose-Free - HOT COCOA
INGREDIENTS:
2 tbsp sugar.
1 cup of vanilla flavored soy milk.
1 tbsp. baking cocoa.
DIRECTIONS:
1) Stir the sugar and cocoa together, pouring in soy beverage.
a little at a time so that it's smooth.
2) Stir, microwave until desired temperature is reached.
