If you're suffering with an indigestion symptom, it's quite possible that a deficiency of an important digestive enzyme called lactase is the source of the problem, and this has compromised the function of the digestive system and it's ability to properly process the sugar in milk. (Lactose) An easy way to find out if this is the problem, would be to take a few lactase enzyme supplements before breakfast, (you can try this anytime you haven't eaten for about 8 hours beforehand) and then drink a 12 oz glass of milk with breakfast. If you feel no indigestion symptom afterwards, and the function of your digestive system is just fine, and if this is not the case when you don't take the lactase enzyme supplements before drinking the 12 oz glass of milk with your next breakfast, you have likely determined that Lactose Intolerance is the source of your indigestion symptom. An enormous variety of edible products often contain dairy, and this means a high likely hood of containing lactose. I bring all of this up, because, when I first started having indigestion symptoms, (about sixteen years ago) for a long time after I had cut out obvious dairy products, I was still having indigestion symptoms. I couldn't figure out what the problem was. I could have saved myself a lot of aggravation if I knew just how prevalent lactose is in the processed foods in our modern diet.

Lactose-Free - PROSCIUTO & ARTICHOKE PASTA SALAD

INGREDIENTS:
One and a half cups of Orzo pasta cooked a la dente.
1 fourteen oz can of artichokes.
One and a half tablespoons of lactose-free mayonnaise.
Two and a half tablespoons of white wine vinegar.
2 teaspoons of Dijon mustard.
Three quarters of a cup of olive oil.
Two and a half tablespoons of lemon juice.
Three tablespoons of fresh chopped basil.
Three tablespoons of fresh chopped Italian parsley.
About 200 grams (7 oz) Prosciuto, sliced into very small bits.
5 scallions or spring onion - finely chopped.

METHOD:
Mix all ingredients thoroughly, adding the Orzo pasta and Artichokes last.
You could even speed things up a bit with a food processor.

Lactose-Free - MUSTARD CHILI SALMON

INGREDIENTS:

4 Salmon Fillets(11/2 lbs or 750 grams)
1/2 cup mayonnaise (no lactose)
2 tbsp.Dijon Mustard
1tbsp. liquid honey
1 tsp each grainy mustard and water
1/2 tsp chili powder
Pinch cayenne pepper
1 tsp lemon juice
1/4 teaspoon salt

METHOD:

1. Place fillets in a greased roasting pan or tray
2. Whisk together mayonnaise, Dijon, honey, grainy mustard,
water,chili powder, salt and cayenne. Remove 1/4 cup for sauce
and stir in lemon juice; set aside. Brush remaining mixture over
salmon.
3. Bake in 425 Degree oven until fish flakes easily when
tested, about 12 minutes. Serve with reserved sauce.

SERVINGS: 4

Lactose-Free - BAKED HALIBUT WITH LEMON, WINE AND GARLIC SAUCE

INGREDIENTS:

4 Halibut fillets (11/2 lbs or 750 grams)
1/2 cup white wine
1/4 cup lemon juice
1/8 cup canola oil
1/8 cup olive oil( preferably lighter tasting)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon pepper

METHOD:

1. Stir together white wine, lemon juice, canola oil, olive oil, garlic powder, onion
powder, salt and pepper.
2. Take 4 pieces of foil large enough to wrap each piece of
the fish in and place them with their edges turned up in a roasting
pan. Place each piece of fish in the center of each of these
pieces and pour the wine and lemon juice mixture over and around
the fish making sure that each piece is thoroughly coated.
Wrap the foil around the fish pieces and seal to make 4 packages.
3. Bake at 400 Degrees Fahrenheit for 25 - 30 minutes or until
fish flakes easily.

This dish is outstanding and you will be amazed at how something so
simple can be so good.

You can also use sea bass, orange roughly or any other white fish you like. Just
remember that with thinner fish like sole, baking time has to be reduced
according to the thinness.

Lactose-Free - HONEY DIJON CHICKEN THIGHS

INGREDIENTS:
8 chicken thighs, skinned
2 tbsp each liquid honey and Dijon mustard
1 tbsp chopped fresh thyme or 1/2 tsp dried thyme
1 tbsp. apple cider vinegar( unpasteurized if possible)
1/2 tsp each salt and pepper

METHOD:
1. Place chicken, bone side up, on greased grill over medium-high heat; close lid and cook for 10 minutes.
2. Meanwhile, in small bowl, stir together honey, mustard, thyme, vinegar, salt and pepper; brush one-third over chicken. Turn chicken and brush again. Close lid and cook, brushing halfway through, until juices run clear when chicken is pierced, about 10 minutes.

SERVINGS: 4
