It's amazing just how many people require to be on a Lactose Free Diet. It's widely estimated that between 30 and 50 million North American adults suffer with some degree of lactose intolerance, and many suffer so severely that they absolutely must follow a lactose free diet at all times or endure agony. Caucasians seem to be the least affected (relatively speaking), with Asians affected the most, and Blacks and Hispanics falling somewhere in between in terms of percentages affected. This means that a huge number of people suffer, often quietly and in resignation while trying to maintain a Lactose Free Diet, which is not easy to maintain.

A Lactose Intolerant Diet requires constant vigilance.

So many food manufacturers use dairy ingredients in their products, that anyone pursuing a Lactose Intolerant Diet needs to be constantly paying attention and vigilant in reading every food label.

Don't forget that food products such as bread and other baked goods, processed breakfast cereals, instant potatoes, soups, margarine, lunch meats, (other than kosher) salad dressings, candies and many other snacks very often contain lactose. And, even prescription and over-the-counter drugs (including birth control pills and various supplements) sometimes contain lactose. Be sure to factor this into your lactose intolerant diet plan.

Not paying full attention to what you put into your mouth can wreak havoc on your lactose intolerant diet and cause near instant misery for those caught unaware.

A Lactose Free Diet is a real pain to stick to. If you're really sensitive (as I was), it's easy to accidentally ingest something containing lactose and get sick as a result. A Lactose Intolerant Diet sometimes requires aggressive questioning of waiters and even the host or hostess at a friendly diner party to try to avoid getting sick when outside of the home. Not fun, I assure you.

Lots of folks think it's just annoying when you pointedly ask about milk ingredients in food, but then they probably don't suffer with lactose intolerance . . . yet. And, as annoying as some may find it, it's absolutely essential for you to get into the habit of knowing exactly what you are putting into your mouth if you are to maintain your lactose free diet.

The lactose intolerance condition tends to manifest itself as one gets older, and/or as the body produces less and less of the lactase enzyme needed to digest milk products. Many folks have a mild lactose intolerance condition and don't yet know they have it. If the condition is not very severe, it may be possible to pass the slight symptoms off as nothing to be concerned about. But unfortunately, lactose intolerance is unlikely to improve as we get older, it just tends to get worse. It's my belief that our modern food industry is partially responsible, and only by re-conditioning the digestive system is it possible to overcome this condition. Unfortunately, some folks, like those born with it may not be able to overcome the condition, but it's my belief that the majority of lactose intolerance sufferers could do away with their lactose free diets as I have done.

Some helpful Lactose Intolerance Diet resources:

A Kosher Symbol can be quite helpful with a Lactose Intolerance Diet. If the Kosher Symbol includes the word "Pareve" or "Parve": the food contains no dairy-based or meat-based ingredients. Fortunately, even major food companies like Kraft® Foods are more and more, catering to people with special food concerns like a lactose intolerance diet. Go to this Kraft® Foods Canada page and scroll down about two thirds of the page. There you will find a marvelous downloadable (.pdf) resource for those people on a lactose intolerance diet. The download contains a comprehensive list of Kraft® Foods that are: Gluten-free, Lactose-free, and/or Kosher.

A lactose intolerance diet can be somewhat flexible depending on the severity of the condition. But, if you find that you are increasingly sensitive to lactose, your only option may be to strictly follow a Lactose Free Diet, avoiding all foods that contain casein, cream, margarine, milk solids, whey and any food product with milk ingredients unless explicitly stated that it's 100% LACTOSE FREE.

Because cheese usually contains less lactose than a similar amount of milk, it's helpful to know that lactose intolerant individuals can sometimes enjoy a slice of cheese while on a Lactose Intolerant Diet, without causing a digestive system problem. However, there is quite a difference in the lactose content of different cheeses.The following table may help you determine which cheeses you might be able to incorporate into your lactose intolerance diet:

If you are somewhat sensitive to lactose, then you should take special note of the above list. Obviously, you should avoid any cheese that brings on symptoms.



Beware of food products listing whey, curds, dry milk solids, milk by-products, and nonfat dry milk powder in their list of ingredients. If any of these ingredients are listed in a products ingredients, the product may contain lactose.

On a recent visit to my local supermarket, I did a comparison of lactose free diet foods versus regular foods. This is the difference in cost that I found:

Lactose-Free - BARBECUE HERBED CHICKEN THIGHS.

INGREDIENTS:
4 garlic cloves, finely chopped.
One half cup of finely chopped fresh oregano or tarragon.
One half cup of finely chopped fresh basil.
1 cup apple juice.
One quarter cup vegetable oil.
One half teaspoon each of salt and pepper.
8 skin on, bone in chicken thighs.

METHOD:
1. Place Garlic, basil and oregano in a large bowl. Whisk in apple
juice, oil, salt and pepper. Place chicken into mixture (marinade)
squeezing out as much air as possible and tightly seal.
Refrigerate overnight (at least 4 hours)

2. Grease grill and preheat barbecue to medium. Discard marinade
and place on grill with lid down. Turn once during cooking, until
chicken is golden brown and feels springy when pressed.
(10 to 12 minutes per side)

Excellent with corn on the cob, and/or other barbecued vegetables.

SERVES:
4 servings.

Lactose-Free - CHILI-GARLIC BEANS

INGREDIENTS:
1 pound green beans
1 tablespoon vegetable oil
One third cup water
2 tablespoons finely chopped or grated ginger.
2 tablespoons oyster sauce.
1-2 teaspoons hot chilli-garlic sauce. (To taste)

DIRECTIONS:
Trim ends from beans. Heat oil in a large frying pan or wok.
Add beans and stir-fry for two minutes over medium-high heat.
Pour in water and stir until beans are tender-crisp and most
of the water is gone. Then stir in ginger, oyster, salt and
pepper and half of the garlic-garlic sauce. Taste. Add more
garlic-garlic sauce if needed.

SERVES:
4-6 servings.

Awesome with pork, chicken or steak.

Lactose-Free - POTATOES LYONNAISE

This is adapted from a well known French recipe with olive oil used in place of the original butter.

INGREDIENTS:
2 lbs potatoes
6 tbsp olive oil
2 onions sliced
2-3 garlic cloves, crushed (optional)
salt and pepper
chopped parsley, to garnish

METHOD:
1. Slice the potatoes into 1/4 inch slices. Put in a large saucepan of lightly salted water and bring to a boil. Cover and simmer gently for about 10-12 minutes, until just tender. Avoid boiling too rapidly or the potatoes will break up and lose their shape. When cooked, drain well.
2. While the potatoes are cooking, heat the oil in a very large skillet. Add the onions and garlic(if using), and fry over a medium heat, stirring frequently, until the onions are softened.
3. Add the cooked potato slices to the skillet and cook with the onions, carefully stirring occasionally, for about 5-8 minutes until the potatoes are well browned.
4. Season to taste with salt and pepper. Sprinkle the chopped parsley over the potatoes serve.

SERVINGS: 6

Lactose-Free - ROSEMARY FLANK STEAK

INGREDIENTS:
2 tbsp Dijon mustard
1 tbsp each wine vinegar and Worcestershire sauce
3 cloves garlic, minced
1 tsp dried rosemary
1/4 tsp each salt and pepper
1 lb flank marinating steak

METHOD:
1. In a shallow glass dish, whisk together mustard, vinegar, Worcestershire sauce, garlic, rosemary, salt and pepper. Add steak, turning to coat. Let stand for 10 minutes.
2. In greased grill pan or skillet, cook steak over medium-high heat until browned but still pink inside, about 4 minutes per side. Transfer to cutting board. Let stand for 5 minutes before slicing thinly across the grain.

SERVINGS: 4

Lactose-Free - GRILLED DIJON HERB PORK CHOPS

INGREDIENTS:
1/4 cup Dijon mustard
2 tsp olive oil
2 cloves garlic, minced
1/4 tsp each salt, pepper and dried thyme
1/4 tsp dried rosemary, crumbled
4 pork loin chops, 1/2 to 3/4 inch (1 to 2 cm) thick

METHOD:
1. In shallow glass dish, whisk together mustard, oil, garlic, salt, pepper, thyme and rosemary. Add chops, turning to coat; let stand for 15 minutes.
2. Place chops on greased grill or in grill pan over medium-high heat; close lid and cook, turning once, until juices run clear when chops are pierced and just a hint of pink remains inside, 8 to 10 minutes.

SERVINGS: 4

This goes really well with Roasted Sweet Potatoes with Garlic (recipe to follow)

Lactose-Free - ROASTED SWEET POTATOES WITH GARLIC

INGREDIENTS:
4 small sweet potatoes
2 tbsp (25 ml) olive oil,
2 cloves garlic, minced,
1/2 tsp (2 ml), salt
1/4 tsp(1ml)pepper

METHOD:
1. Scrub potatoes; cut crosswise two-thirds through into 1/4 inch (5 mm) thick slices. Put these into a small roasting dish.
2. Whisk together olive oil, minced garlic cloves, 1/2 tsp (2 ml), salt and pepper.
3. Pour garlic mix over potatoes and stir all together. Roast at 400 degrees F for 45-50 minutes or until golden and tender.

SERVINGS: 4
