It's also a good thing to be able to enjoy lactose free ice cream or enjoy a lactose free chocolate while you're on the 38 Day Program, because it just makes the whole program that much easier to follow and stick to. (I was so excited about the opportunity of getting rid of lactose intolerance, that I followed the program to the letter. I suggest you do the same.)

I know it's hard to contemplate being completely free of the worry about lactose-free this and lactose free that - if you're suffering from the bloating, gassiness, cramps, discomfort and diarrhea associated with Lactose Intolerance. Until then, Here are some more wonderful resources for Lactose free Ice Cream, Lactose free chocolate and other tasty lactose free treats, not to mention lactose free cake recipes and lactose free desert recipes that you (even if you're lactose tolerant) can thoroughly enjoy.

It's worth noting that most semi-sweet chocolate chips and dark or bittersweet chocolate has little or no lactose in it. Make sure that you check the label first though. Make sure they don't have added dairy products like whey or butter. I've used Baker's and Log House semi-sweet chocolate chips, and Ghirardelli's dark chocolate, Hershey's Cocoa and Syrup are also lactose free.

Lactose Free Ice Cream & Substitutes.

While there are an increasing number of Lactose Free Ice Cream manufacturers (see resources below) it's worth noting that a truly great substitute for ice cream is sorbet. Ben & Jerry's and Haagen Dazs, both make mouth wateringly delicious sorbet's. Also, there are some cold and creamy non-dairy frozen desserts made from soy and other substitutes, which are marvelous. (see resources below)

Here's a recipe from Better Homes and Gardens, to make your own "Home Made" Lactose Free Ice Cream.

LACTOSE-FREE - DOUBLE BERRY ICE CREAM

This easy-to-make ice cream has both strawberries and raspberries.

INGREDIENTS:
1 cup sugar
1 envelope unflavored gelatin
4 cups LACTAIDŽ Whole Milk
3 eggs, beaten
1 12-ounce package frozen lightly sweetened red raspberries
1 10-ounce package frozen strawberries in syrup

METHOD:
In a large saucepan combine sugar and gelatin. Stir in LACTAIDŽ Whole Milk.
Cook and stir over medium heat until mixture just starts to boil. Remove from heat.
Whisk about 1 cup of the hot mixture into beaten eggs; return all to saucepan.
Cook and stir for 1 to 2 minutes or until mixture coats a metal spoon (temperature will be about 175 to 180 degrees F).
Do not boil. Stir in raspberries and strawberries. Cover and chill 4 hours or overnight until completely chilled.
(Mixture will be very thick after chilling.)

Transfer the mixture to a 4- or 5-quart ice-cream maker and freeze according to the manufacturer's directions.
Makes about 2 quarts.

Lactose-Free - WALNUT CAKE

INGREDIENTS:
6 eggs
11/2 cups of sugar
125 g canola oil
350 g nuts - 1/2 chopped and 1/2 ground
150 g raisins (optional)
150 g flour

METHOD:
1. Preheat oven to 350 F.
2. Beat the eggs well and add the sugar until thoroughly mixed.
3. Add the oil, flour and ground nuts and mix well.
4. Fold in the chopped nuts and raisins.
5. Pour into a greased (with canola oil) and floured 9" x 12" pan.
Bake at 350 F for 35 minutes until toothpick inserted into middle of cake comes out clean. Do not over bake.

This cake keeps well for about a week in the fridge and can be frozen for up to 4 months.

SERVES:
9 -12 squares.

Lactose-Free - FRUIT UPSIDE DOWN CAKE

INGREDIENTS:
6 eggs
300 g sugar
150 g + 2 tablespoons canola oil
2 teaspoons vanilla extract
150 g flour
grated peel from 1 lemon
1/2 cup brown sugar
2 cups sliced plums, cherries, apples or peaches

METHOD:
1. Preheat oven to 350 Degrees F.
2. Mix together well the eggs and sugar.
3. Mix the oil in slowly and gradually.
4. Mix in the vanilla, then the flour and then the vanilla extract.
5. Line the pan with parchment paper or grease with canola oil and then flour
a rectangular baking pan that is approximately 8.5 x 12 inches.
6. Heat together in a stovetop pan 2 tablespoons of canola oil and 1/2 cup
of brown sugar
7. Spread the brown sugar mixture in the baking pan. If you are using apples
you can sprinkle some cinnamon on top of this if you like.
8. Place the sliced fruit on top of the brown sugar mixture in the
baking pan.
9. Bake at 350 Degrees F for 45 minutes. When cake is slightly cooled
cut and turn over pieces so fruit is on top to serve.

SERVES:
10 -12 squares.

Lactose-Free - VANILLA RICE PUDDING

INGREDIENTS:
6 cups (1.5 L) Vanilla Flavor Fortified Soy Beverage
1 cup (250 mL) Long Grain Rice
1/2 tsp (2 mL) Cinnamon
1/4 tsp (1 mL) Salt
1/3 cup (75 mL) Chunky fruit spread of your choice. Thick fruit jam works very well.

INSTRUCTIONS:
In a large saucepan, bring 5 cups (1.25 L) of soy beverage to a boil.
Stir in rice, cinnamon and salt. Bring to a boil again.
Reduce heat to medium-low, and simmer, uncovered, for 30 to 35 minutes, stirring frequently.
Remove from heat. Stir in remaining soy beverage.
Spoon into serving dishes. Top each serving with a dollop of fruit spread.

SERVINGS:
6 - 8

Lactose-Free - ANYTIME FRUIT SALAD DESERT

This easy to prepare Lactose Free Desert can be made with almost any
variety of in season fruits. The basic recipe follows, but experiment
with whatever you have on hand. The only thing is, if you use bananas,
the dessert doesn't keep for more than a day or so. Otherwise the desert
is most delicious even after several days in the refrigerator.

INGREDIENTS:
1 Apple, cored and sliced into bite sized chunks.
1 or two peaches sliced into bite sized chunks. (depending on size)
1 cup of berry fruits (strawberries, cherries, blueberries etc.) topped and sliced at least in half.
1 orange, peeled, sectioned and sliced at least into half sections.
1 cup of real orange juice.
1 - 2 tablespoons of honey or brown sugar.

METHOD:
Simply mix all ingredients in a large enough bowl.
The reason for slicing all the fruit is to let the various fruit juices combine.
This simple but extraordinary lactose free desert is colorful and is really best after a day in the refrigerator.
Most flavorful at room temperature though.

SERVES:
4 - 5 Servings.

Lactose-Free - CHOCOLATE SAUCE

INGREDIENTS:
1 cup low-fat vanilla soy milk
1 cup brown sugar
1/2 cup unsweetened cocoa
1 tablespoon arrowroot

DIRECTIONS:
In a small, saucepan, combine the brown sugar, soy milk and cocoa and bring to a boil.
Reduce the heat and simmer for 4 - 5 minutes stirring constantly to avoid burning the mixture.
Mix the arrowroot with 1 tablespoon of water, and add to the cocoa mixture,
while continuing to cook for another 2-3 minutes.
Serve heated or at room temperature.

Stores well in the refrigerator for up to two weeks. (Airtight container.)

Delightful when drizzled over a lactose free ice cream or
Dip bite sized chunks of fruit into the mixture like a fondue.
