As a modern society, we've become so used to instant gratification that if something doesn't work immediately we toss it and move on to the next remedy. Today's lactose free recipes are great, because they keep very well in the refrigerator, and can be consumed over the course of a week, for lunch or dinner. A great time saver for those on the program.

Lactose-Free - TUNA PASTA SALAD.

INGREDIENTS:
2 cans (170 g each) of tuna in vegetable broth and oil.
4 rounded tablespoons mayonnaise.
1/2 - 3/4 teaspoon garlic powder.
1/2 - 3/4 teaspoon onion powder.
1 1/2 teaspoons salt.
1/8 teaspoon pepper .
2 cups rotini pasta.
2 teaspoons vegetable oil

METHOD:

1.Flake the tuna and mix it with the mayonnaise, garlic and onion powder, 1/4 teaspoon of the salt and the pepper.

2.Bring a pot of water to a boil with 1 1/4 teaspoon salt, turn the heat down to medium high, then cook the rotini in that for about 15 minutes.

3.Drain the pasta, then pour in the tuna mixture mixing with a wooden spoon (so as not to break apart the pasta) and serve.

SERVES:
4-6 servings.

This is absolutely delicious with a green salad. Keeps very well in the refrigerator for up to a week. It should be taken out of the fridge about 30 minutes before eating so it gets to room temperature (I think it tastes better at room temperature than just out of the fridge)

When you are lactose tolerant again, a fantastic addition to this is 2 tablespoons of Creamy Caesar salad dressing instead of one of the tablespoons of mayonnaise in the tuna mixture.

Lactose-Free - PASTA SALAD (ITALIAN)

INGREDIENTS:
1 package (10-oz.) frozen broccoli florets
4 cups of your favorite cooked pasta. (Rotini works well)
1 can (14.5-oz.) diced tomatoes, drained
1/2 cup Italian salad dressing. (Lactose Free)
1/2 teaspoon garlic powder.
Salt and Pepper to taste

DIRECTIONS:
Bring a large pot of water to a boil. Add frozen broccoli and cook over high heat for 5 minutes or until crisp-tender.
Thoroughly drain and mix in cooked pasta, tomatoes, Italian salad dressing and garlic powder. Serve warm or chilled.

SERVES: 4

Lactose-Free - GOLDEN GARLIC CHICKEN WITH SWEET POTATOES

INGREDIENTS:
4 bone in Chicken Breasts (you can also use thighs or legs)
1 lb. of sweet potatoes
3 tablespoons of lemon juice
4 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons fresh rosemary finely chopped
3 cloves garlic finely chopped
1/2 teaspoon garlic powder.

 

METHOD:
Preheat the oven to 425 Degrees F
Put the stalks from the rosemary into the bottom of the roasting pan
Peel the potatoes and put them into the pan.
Put the chicken next to the potatoes in the pan.
Pour the lemon juice and olive oil over the chicken and potatoes. Stir the potatoes, lemon juice and olive oil well, and make sure the top of the chicken is well coated with the lemon juice and oil
Sprinkle all of this with salt, pepper, garlic powder,
chopped fresh garlic and rosemary.
Cover with foil and roast for 15 minutes. Remove the foil and continue roasting for 45 minutes - until chicken is golden on top and potatoes are tender.

SERVES:
Makes 4 servings

This is a very delicious dinner that you are sure to receive great compliments on.
For a slightly stronger flavor, you can marinate this dish before you roast it for 4 hours in the fridge.

Lactose-Free - SALMON CAKES

INGREDIENTS:
2 large potatoes (1 lb or 500 g)
3 green onions, chopped
1/4 cup chopped fresh coriander (optional)
1 tbsp. Dijon mustard
1/2 teaspoon salt
1/4 tsp each grated lemon rind, pepper and hot pepper sauce
1 egg. beaten
2 cans ( each 7.5 oz./213g) salmon, drained and flaked
3 tbsp. vegetable oil
4 lemon wedges
mayonnaise

METHOD:
1. Peel and cut potatoes in half crosswise. In 6 cup microwave able dish, cover and microwave potatoes with 1 cup (250 ml) water at High until tender, about 10 minutes. (Or cover and cook in saucepan of boiling salted water until tender, 15 to 20 minutes.) Drain.
2. In large bowl, mash potatoes until smooth; stir in onions, coriander, mustard, salt, lemon rind, pepper and hot pepper sauce. Blend in egg. Fold in salmon. Let cool for 5 minutes. Using hands shape into eight 3/4 inch (2 cm) thick patties.
3. In large skillet, heat half of the oil over medium heat; cook 4 of the patties until golden, about 5 minutes per side. Repeat with remaining oil and patties. Serve with lemon wedges and mayonnaise.

SERVINGS: 4

These go really well with cucumber salad - recipe to follow.

Lactose-Free - CUCUMBER SALAD

INGREDIENTS:
One unpeeled English cucumber
1 tsp salt
half red onion
1/3 cup olive oil
1/6 cup lemon juice
1/2 teaspoon dried dill

METHOD:
1. Thinly slice the cucumber, transfer to colander. Toss with 1 tsp salt, let stand for 30 minutes. Rinse under cold water; drain well. Meanwhile, in bowl of ice water, soak thinly sliced red onion; drain.
2. In small salad bowl, whisk together together olive oil, lemon juice and dill. Add cucumber and onion, toss to coat.

SERVINGS: 4-6
