It's important for instance, to know the difference between a dairy intolerance and a dairy allergy. While the terms are sometimes used interchangeably, they do not mean the same thing. It's also important to realize that some of the same symptoms can be triggered by a variety of things, ranging from insect bites to certain foods and certain environments, so it's important to pay close attention to the patterns and associations that trigger your symptoms.

Generally, a dairy (milk) allergy can produce various reactions, ranging from a swelling of the lips, tongue, mouth, face or throat, as well as reactions in the digestive system which can include abdominal pain, bloating, diarrhea, vomiting, gas and cramps. Other reactions may also include sneezing, runny nose, coughing, watery and/or itchy eyes. These reactions typically manifest themselves quite quickly, often within a few minutes. A Lactose Intolerance Symptom is caused not by an immune system reaction, but by the fermentation of undigested lactose (the sugar in milk) in the intestine, due to a deficiency of the lactase enzyme. A common lactose intolerant symptom probably includes one or more of the following:

  • Bloating and Gas.
  • Nausea.
  • Abdominal Pain/Cramps.
  • Diarrhea.
  • A Lactose Intolerance Symptom usually begins within 30 minutes to a couple of hours after consuming something containing lactose. Usually within 12 hours, the Lactose Intolerant Symptom disappears . The severity of the symptom varies depending on the lactose tolerance of each individual. This can vary widely from person to person.

    One of the first things I would suggest before you begin, is to find a milk substitute that you like. My choice was soy milk. Initially, this was not an appealing option for me, as I had a preconceived idea that it would taste terrible. But surprise, surprise, it wasn't hard to find a brand that was absolutely delicious. My favorite (In Canada) is President's Choice® Organic Soy Milk, but Silk® brand is pretty good too. There are lots to choose from, and they range from a quite watery consistency to a rather creamier consistency.

    Now, even though I can drink milk anytime I want, I still enjoy the soy milk regularly. A good tasting milk substitute is important because you'll use it in everything from tea and coffee to cereal, and also to cook with. Buy several small cartons of different brands, then make your choice. I found that a creamier consistency worked best for me, with tea, coffee and cereal being quite delicious. Soy milk was very easy to consume and hardly a sacrifice at all.

    Also, I would recommend a great tasting Lactose-Free margarine (I like Fleishman's, but there are others) and a terrific soy or rice - cheese substitute, which come in a variety of styles and flavors:

    Once again, there are several brands of cheese substitutes available at health food stores and better supermarkets, but I like Galaxy Foods and Tofutti - Awesome lactose-free hard and soft cheese substitutes. Tofutti is a really convincing substitute for real cream cheese in just about any context. (Makes a superb cheesecake) Or Cemac Foods Corporation's Nu Tofu. Various non-dairy substitutes are made from soy, rice or oat milk.

    This list wouldn't be complete without a lactose free snack or energy bar. Clif Bar makes a variety of delicious energy/snack bars to keep you going on the run or between meals and, they're widely available at health food stores and progressive supermarkets like Whole Foods Markets.

    With a supply of some of these essentials in your kitchen, you'll hardly notice a difference in your cooking and eating lifestyle and you'll breeze through the program. (Just like I did)
